Spotlight on Celtic Moon Elk Farm

Donn Cann's Celtic Moon Elk Farm sells a variety of cuts of locally raised elk. Elk is a very lean red meat. Farmed elk isn't gamey at all; it has a rich flavor that goes beyond beef. It's also very lean. If you're looking for the flavor of beef with fewer calories and less saturated fat, elk is a great alternative. Celtic Moon Elk Farm always has elk burgers and ground elk in stock, and generally carries many different cuts and quite a variety of sausages (note that some of the sausages contain a little bit of ground pork to avodi them being too dry).

Celtic Moon Elk Farm sells directly to consumers by attending farmer's makets, and also provides elk to restaurants.

Donn also recently became involved in creating Cobb Hill Frozen Yogurt with Jeannine Kilbride of Cobb Hill.

Cobb Hill Frozen Yogurt is currently available in vanilla, maple and strawberry flavors. The maple froyo is made with Cobb Hill maple syrup. It's expected to be available at the Upper Valley Coop and in other stores any day now, and you can definitely purchase it from Donn at the Celtic Moon Elk Farm booth now. Cobb Hill Frozen Yogurt is a farmstead product (its ingredients come from the same farm, as much as possible), non-homogenized and is hand-made in small batches.

Celtic Moon Elk Farm attends the Norwich, Lebanon and Newport farmer's markets.

Donn had this to say about farmer's markets:

"The farmers' markets account for 90% of our total business. We decided to start selling the frozen yogurt at markets as it gives the consumer a chance to learn far more about the product than they could from reading the label alone. Over the course of the next month or so, our yogurt will start to be available in stores as well as the Lebanon and Norwich farmers' markets. "

If you try out some elk, be sure to cook it either quickly or slowly; as elk is so lean it can quickly become tough if not cooked properly. Celtic Moon Elk Farm's flyer provides several recipes.
