Celtic Moon Elk Farm offers elk, an extremely lean red meat and great alternative to beef. They raise their own elk in conjunction with Cornish's East Ridge Elk Farm, and sell it to restaurants and at farmer's markets (including the Newport, Lebanon, Newport and Norwich markets).

Owner Donn Cann has a portable freezer chest he brings laden with elk products to the markets. The selection varies depending on the week, but you'll usually find a variety of cuts of elk (think what you'd expect for beef), steaks, burgers or ground meat, and sausages (breakfast, chorizo, maple, Italian and more). And at the Lebanon market you can also get fresh cooked elk burgers.

Elk is very low fat and so cooks very quickly. Expect to cook thawed burgers for two minutes on a side over high heat.
