Status update from Umpleby's

There is a great article in the latest issue of New York Magazine. It is about Pat La Frieda and his wholesale meat business and how he sells blends of ground meat for hamburgers to a ton of restaurants in the City. I have been intrigued by this idea for a while now and I am getting closer to making it a reality. You read it here first - I am planning on buying different cuts of meat from a local farm (Back Beyond Farm in Chelsea, VT) grinding it myself and creating a truly "local" burger. The meat will be local, it will be on our bun, the condiments to the extent we can will be local and the lettuce tomato and cheese will be local too!!! I can't wait. And let me tell you - LOCAL TASTES FANTASTIC!!!!
